Comic Con Fit - Feb Veggie Challenge

Hello Comic Con Fit Fam!

After participating in Alyssa's Mystery Box Cooking Challenge on #CupOTeaSDCC, I have (and I'm sure some of you do too) the cooking bug!

I've been wanting to #cook more #vegetables, so let's do a February Vegetable Challenge!

The goal is to cook a vegetable each week.

Here is what each week's vegetable will be:

Week 1: Corn (dried, canned, fresh or frozen)
Week 2: Baby Bok Choy
Week 3: Sweet Potato
Week 4: Eggplant

All dishes DO NOT have to be completely vegetarian, but the chosen vegetable should be the star of the dish.

When to post, Social Media and Hashtags
:
I'll be posting photos and a brief description of ingredients on the ComicConFit social media accounts for Twitter, Facebook, Instagram every Saturday evening.

Don't forget to use the hashtags #ComicConFit and #FebVeggieChallenge.

Facebook:
Please add your photos, videos, ingredients and recipes to the comments of the pinned post on the Comic Con Fit page (please include links to recipes that you found online).

Friends of Comic Con Forum:
For those of you who are part of the Friends of Comic Con forum...please post your dishes to this thread.


Lastly, the ComicConFit.com website is slowly coming together. I will create preview and a follow up posts to document this challenge.

I know a lot of us are busy, so if you have time to prep a recipe so others within our Comic Con Fit family could also try to cook your dish...that would be greatly appreciated (these will be included in the follow up blog post)!

ya'll will get treated to my Corn chowda.....  a wicked blend of 'mid-western farm corn purist' and 'New England coast chowda'

Does drying out kernels of corn, placing them in hot oil in a pot, and then slathering the resulting popped kernel with butter count?

That's my kind of veggies!  >:D

Been enjoying cooking lately.

Nothing complicated...but kind of just looked in the fridge to see what I could make for dinner because I was hungry but so sleepy and tired from my long day yesterday.

Ended up quickly sauteeing carrots, leeks, garlic. I used Kerrigold Butter instead of olive oil and seasoned with sea salt and black pepper.

Then I paired it with some leftover chicken adobo and brown rice.

It was kind of relaxing to chop the vegetables and cook while listening to some Sharon Jones and the Dap Kings.

Now I'm up again at 4am. Ready to grind and do it all over again (hmmm...what am I going to cook tonight?).

Still thinking about what I'm going to do for the corn challenge...but been feeling really motivated overall and just wanted to share this.

I'm super excited to hear everyone's recipes! I've gotten in a rut of making the same things over and over. A mix up is just what I needed.

Come on folks. It's one meal a week. You can do this. It doesn't have to be mega fancy. Just learning to cook? This is perfect for you? Get a loved one to join in and make it with you!

This is just soo mouthwatering to look at. What's the recipe?

I'm gonna speak for [member=5419]Aaron[/member] and myself here- we suck at doing recipes --- Aaron may diverge from this but, for example this is my pasta sauce

and onion or 2 if they're small to med
a half head of garlic or more if that's not enough, i like garlic so i usually use a full head
a green pepper or two
good quality hamburger around a pound more or less
a jar of sauce
a lg can of tomato's diced
oh and spices- whatever you have  from the following basil, oragino, tarragon, salt
that should make about 4-6 servings

LOL-DH is the same way, but has finally started to write down recipes in a somewhat organized format (so he could create a database, naturally!). I am the kind of cook that follows a recipe-I need structure, so maybe that's why he's trying.
