Caught up.  I like the show.

It's very unexpected.  The contrast of BY and a bounty hunter is like Kitty and Wolvie.

Interested to see where they go with it.

The show seems to meandering a bit with these last two episodes. They haven’t at all furthered the storyline of who the package is and why there’s a bounty on him. I would be okay with that if they instead dived into the backstory of the Mandalorian, but they really haven’t done that either. These two episodes felt like filler, which is a bit frustrating considering there’s only 8 episodes and they’re all under 40min long.

I'm a bit behind on this series, but my take on this series is that is feels like a throw-back to old school television.  Most shows didn't have a long-form story: they were a situation-of-the-week.  Even shows from last century that are synonymous with long-form storytelling like "The X-Files" were mostly "monster-of-the-week" episodes with a small handful of ongoing story eps sprinkled in.  It really wasn't until this century that TV  series decided to treat the medium more cinematically with higher budgets and long-form story arcs.  Heck, we live in peak Golden-Age TV where we have an incredibly intelligent, well-written sitcom about philosophical implications of an after-life (that has an incredibly entrenched long-form story).
  Mandalorian seems to embrace the "new story per episode" type of thing, and that formula could feel stale rather quickly given what audiences are now mostly used to from both 'high-end' series AND the Star Wars saga specifically (even the one stand-alone SW movies was so entrenched with the longer stories of the SW universe & characters).
I kind of dig that aesthetic of "Mandalorian," but I agree it could feel meandering if the show essentially follows the same basic formula every single episode.

I think Star Trek: Deep Space 9 struck the perfect balance between standalone episodes and those that extended the war storyline. Another would be Supernatural. But even in the standalone Monster of the Week episodes, they often insert some dialogue referencing the bigger storylines, something to the effect of "Oh yeah, Armageddon is coming, but we still have a duty to help the regular people deal with their local monster problem". Mandalorian needs a bit more of that glue to tie episodes together.

I guess a certain bounty isn’t the only one to have a certain previously unseen Force power! (Although it’s been used in other mediums like now non-canon novels & animated series & video games).
